A couple of us in the WFM admin office gave this recipe by cookbook author Laurel Randolph a whirl. And at least two of our kids went back for seconds. Who doesn’t love the sweet, nutty flavor of butternut squash? It’s a little like dinner and a little like dessert. Then you throw in some Swiss chard, and voila! This quiche is a nutritional powerhouse.
Butternut squash is a great source of fiber, vitamin C, magnesium, and potassium; and Swiss Chard is packed with vitamin A and K.
Ingredients
- 1 large butternut squash
- Canola or grapeseed oil
- Bulb of garlic
- Medium onion (halved and sliced)
- Salt
- Black pepper
- 1 pre-made pie crust
- 4 large eggs
- Sour cream
- Milk
- Flour
- 1 bunch Swiss chard
- 1 cup shredded sharp cheddar cheese
