Fall Quiche With Roasted Butternut Squash

A couple of us in the WFM admin office gave this recipe by cookbook author Laurel Randolph a whirl. And at least two of our kids went back for seconds. Who doesn’t love the sweet, nutty flavor of butternut squash? It’s a little like dinner and a little like dessert. Then you throw in some kale, and voila! This quiche is a nutritional powerhouse.

Butternut squash is a great source of fiber, vitamin C, magnesium, and potassium; and Swiss Chard is packed with vitamin A and K.

Here’s what you’ll need:

  • 1 large butternut squash
  • Canola or grapeseed oil
  • Bulb of garlic
  • Medium onion (halved and sliced)
  • Salt
  • Black pepper
  • 1 pre-made pie crust
  • 4 large eggs
  • Sour cream
  • Milk
  • Flour
  • 1 bunch Swiss chard
  • 1 cup shredded sharp cheddar cheese
