When life hands you fresh peaches… make cobbler!
What You Need
Filling
6 large peaches, peeled and cut into thin wedges
¼ cup of sugar
1 Tablespoon lemon juice
1 teaspoon cornstarch
Topping
1 cup flour
½ cup sugar
1 teaspoon baking powder
½ teaspoon salt
6 Tablespoons cold butter, cut into small pieces
¼ cup of boiling water
What to Do
Preheat oven to 425 degrees. Toss peaches with ¼ cup of sugar, lemon juice and cornstarch. Spoon into a non-reactive pan (ceramic, glass or stainless steel). Bake in oven for 10 minutes.
While peaches are baking, mix together flour, ½ cup of sugar, baking powder and salt. Blend butter into flour mixture with fingertips or a pastry blender until the mixture resembles coarse meal. Stir water into flour and butter mixture until combined. Remove peaches from the oven after 10 minutes and drop spoonfuls of flour mixture over the peaches. Topping will spread as the cobbler bakes. Bake in the oven until the topping is golden, approximately 25 minutes
