Ingredients
- 1 lb. ground lamb
- 1 large sweet onion
- 1 Tbsp. dried oregano or 2 sprigs fresh
- Olive oil
- Salt and pepper
- 4 hamburger rolls
- ¼ c pitted Kalamata olives
- ¼ c pepperoncini peppers
- ½ c roasted red peppers
- ½ c Greek yogurt
- 1 sprig fresh mint
- ½ lb. feta
Steps to make burgers
- Pre-heat grill.
- Finely mince ¼ cup of onion.
- Add onion to lamb with salt and pepper and a sprinkling of oregano.
- Gently mix, then form into 4 patties and set aside.
- Slice remaining onion into ¼ inch rounds. Brush with olive oil and salt and pepper. Set aside.
- Roughly chop olives, pepperoncini, and roasted red peppers. Mix with olive oil and remaining oregano, and season with salt and pepper. Set aside.
- Finely chop mint; mix into Greek yogurt, season with salt and pepper, and set aside.
- Brush cut sides of burger buns with olive oil.
- Grill onions until softened and lightly charred.
- Grill burger rolls until lightly toasted.
- Grill burgers to desired doneness. DO NOT press down on burgers while cooking, as this will only make them dry!
- To assemble: Spread Greek yogurt mixture on both sides of roll. On the bottom roll, spread olive mixture, then add grilled onion, burger, and a slice of feta. Top with other half of roll.
