Amelia’s Lamburg-ini Recipe

Throughout the month of July we’re celebrating the almighty burger! Every year we put a spin on summer’s quintessential dish with recipes by our WFM culinary team. This year we asked a few of our “non-culinary” staffers to share their favorite way to enjoy a burger. And they went all out with some super unique and creative recipes! We’re excited to share them with you here.

Ingredients 

  • 1 lb. ground lamb  
  • 1 large sweet onion  
  • 1 Tbsp. dried oregano or 2 sprigs fresh  
  • Olive oil  
  • Salt and pepper  
  • 4 hamburger rolls  
  • ¼ c pitted Kalamata olives  
  • ¼ c pepperoncini peppers  
  • ½ c roasted red peppers  
  • ½ c Greek yogurt  
  • 1 sprig fresh mint  
  • ½ lb. feta  

 

Steps to make burgers

  1. Pre-heat grill.  
  2. Finely mince ¼ cup of onion.  
  3. Add onion to lamb with salt and pepper and a sprinkling of oregano.  
  4. Gently mix, then form into 4 patties and set aside.  
  5. Slice remaining onion into ¼ inch rounds. Brush with olive oil and salt and pepper. Set aside.  
  6. Roughly chop olives, pepperoncini, and roasted red peppers. Mix with olive oil and remaining oregano, and season with salt and pepper. Set aside.  
  7. Finely chop mint; mix into Greek yogurt, season with salt and pepper, and set aside.  
  8. Brush cut sides of burger buns with olive oil.  
  9. Grill onions until softened and lightly charred.  
  10. Grill burger rolls until lightly toasted.  
  11. Grill burgers to desired doneness. DO NOT press down on burgers while cooking, as this will only make them dry!  
  12. To assemble: Spread Greek yogurt mixture on both sides of roll. On the bottom roll, spread olive mixture, then add grilled onion, burger, and a slice of feta. Top with other half of roll.
