Easy Egg Bite Recipe for Leftover Easter Ham

Not sure what to do with your leftover Easter ham? Why not whip up some egg bites! We love this quick and easy, protein-packed recipe because it’s so customizable. Simply use your Easter ham, pre-cook your other add-in, and mix and match!

WHAT YOU’LL NEED

  • 8 eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese or to taste (gruyere, feta, Vermont cheddar, etc.)
  • 2 cups pre-cooked add-ins (ham, bacon, broccoli, spinach, bell peppers, onions, etc.)
  • Salt & pepper to taste

INSTRUCTIONS

  1. Preheat oven to 350℉.
  2. Grease muffin tin. We don’t recommend using paper liners. They tend to stick to the egg bites when you try to peel them off.
  3. Add eggs, cottage cheese, salt, and pepper to blender. Blend until smooth.
  4. Divide mixture among muffin cups in tin, filling each cup about halfway.
  5. Add cheese and your desired mix-ins. Carefully stir with a small spoon.
  6. Bake for 20-22 minutes or until firm in the center.
  7. Remove pan from the oven. Let egg bites cool for a few minutes before removing from the pan.
  8. Enjoy right away or store in the refrigerator for up to three days. These are an excellent grab-n-go breakfast option!
