Not sure what to do with your leftover Easter ham? Why not whip up some egg bites! We love this quick and easy, protein-packed recipe because it’s so customizable. Simply use your Easter ham, pre-cook your other add-in, and mix and match!
WHAT YOU’LL NEED
- 8 eggs
- 1 cup cottage cheese
- 1 cup shredded cheese or to taste (gruyere, feta, Vermont cheddar, etc.)
- 2 cups pre-cooked add-ins (ham, bacon, broccoli, spinach, bell peppers, onions, etc.)
- Salt & pepper to taste
INSTRUCTIONS
- Preheat oven to 350℉.
- Grease muffin tin. We don’t recommend using paper liners. They tend to stick to the egg bites when you try to peel them off.
- Add eggs, cottage cheese, salt, and pepper to blender. Blend until smooth.
- Divide mixture among muffin cups in tin, filling each cup about halfway.
- Add cheese and your desired mix-ins. Carefully stir with a small spoon.
- Bake for 20-22 minutes or until firm in the center.
- Remove pan from the oven. Let egg bites cool for a few minutes before removing from the pan.
- Enjoy right away or store in the refrigerator for up to three days. These are an excellent grab-n-go breakfast option!
