It’s simply amazing. The Farmers’ Market has a handful of nationally recognized cheesemakers right in our back yard. And we even have one of them making a special farmstead cheese just for us. Since they are right down the road, it’s easy for us to be able to offer you a sampling of these outstanding artisan cheeses—plus it’s a ton of fun. Talk about Woodstock farm-to-table!
- Cobb Hill Ascutney Mountain: Named after a breathtaking local peak, Ascutney Mountain, made in Hartland—considered a Woodstock “suburb” is an alpine-style cheese with a complex, nutty flavor. It was awarded a blue ribbon in 2006 by the American Cheese Society in the Farmstead Cheese category, which means that all the milk comes from their own farm.
- Billings Farm Butter Cheddar and Reserve Cheddar: Handcrafted in small batches at Grafton Village Cheese Company in Grafton, Vermont, using 100% raw milk from the Billings herd of over 40 purebred, registered Jersey cows. This award-winning, all-natural cheese is aged for 60 days.
- VT Farmstead Alehouse Cheddar: Located in lovely South Woodstock, VT Farmstead makes its cheese in true farmstead way— from the milk of the cows from this very farm. And P.S. the cows live the life of riley with an ‘open’ style barn and plenty of room to meander plus water beds to lounge. They use Harpoon Ale which compliments the wonderful sharpness of this aged cheddar.
- Springbrook Farm Reading Cheese: Sporting an orange pink rind and a buttery yellow paste Reading is a real looker, and the taste follows through too. It’s a wonderful cheese that’s best described as buttery with a slight mushroom flavor. This is a classic Raclette-style cheese is a great melter and frankly, makes a killer grilled cheese sandwich.
