The Hughes-Muse family of Laughing Child Farm is taking a breather. The sweet potato harvest, which began on Aug. 25, wrapped up this week. We’ll have their beautiful organic sweet potatoes at the Market for a little while longer. So if you haven’t stocked up, now’s the time.
Laughing Child Farm is located about 50 miles southwest of Woodstock, in Vermont’s Mettawee Valley. The 39-acre family farm, which is certified organic by the Vermont Organic Farmers (VOF) and USDA, is the largest producer of sweet potatoes in the state. The Hughes-Muse family grows two varieties of sweet potato that are suited for our northern clime: the Beauregard, which has a firm texture that makes it perfect for soups and stews, and the Covington, ideal for mashing into an old-fashioned sweet potato casserole.
Timothy, Brooke, and their four children all pitch in to keep the farm running. Timothy oversees field operations, while Brooke manages the packing house and sales. The kids lend a hand in the fields and help sell their freshly baked sweet potato pies on weekends at their farm stand.
