Nancy's Balsamic Vinaigrette

Goat Cheese, Cranberry And Balsamic Vinaigrette Spread

• 1/2 pound of your favorite goat cheese (Vermont Butter and Cheese Company log does well)

• 1/2 (generous) cup of dried (sweetened) cranberries

• 2 Tablespoons Nancy's Balsamic Vinaigrette

Pulse the dried cranberriesin the food processor until they are about 1/2 their original size. Add goat cheese and vinaigrette and blend. Serve with Kashi TLC's or your favorite cracker.

Note: These same ingredients can be the start of a delicious salad. I like to use Romaine as it can stand up to the dried cranberries. To serve six: Wash and break into pieces two head of romaine. Sprinkle with about 3/4th cup dried cranberries, 1/2 cup chopped cashews or pecans and 1/2 cup crumbled goat cheese. Dress sparingly with Nancy's and enjoy!
