Blueberry Balsamic Chicken
Filling:
• 2 boneless, skinless chicken breasts
• 1/2 cup of Three Acre Kitchen Balsamic Marinade
• 1/2 cup of Three Acre Kitchen Blueberry Balsamic Glaze
• Salt to taste
Cut breasts into four pieces length wise. Add the Balsamic Marniade and marinade for 20 minutes or so. Throw a bit of olive oil in a pan and sauté the chicken—keep the rest of the marinade on the side for later use—for a few minutes on each side, turning frequently, until the chicken is barely done.
Remove chicken from the pan and set aside for a moment. Take your Blueberry Glaze and add to the pan juices from your sauté. Combine the original Marinade too and bring both to a boil—then turn heat down and simmer for a few more minutes. Then return the chicken to the pan and reheat for another several minutes.
It’s that easy. Serve over rice and fresh chard, kale or green beans—or whatever is your fancy.
