Profoun Salsa
Profoun Salsa is different from all others I’ve tried. For one thing, it’s thick. It has the consistency of a hearty tomato sauce. For another, it’s not rough-chopped or chunky, per se; it’s more consistent. It’s also very, very flavorful, with the individual flavors of onion, peppers, lime juice and garlic, all standing up for themselves against the background of fresh tomatoes. It’s really well-balanced and clean-tasting, equally good on a corn chip or a burrito or a grilled chicken breast. Profoun is my very favorite Vermont-made jarred salsa (and believe me, that’s not a small category!)

Salsa a la Woodstock Farmers' Market
This is an easy recipe in the summer when you have your favorite garden tomatoes.
3 serrano chilies (can sub one jalapeno if you'd like not so hot)
2 large vine ripe tomatoes
1/2 cup white onion chopped
One good-sized bunch of fresh cilantro minced (stems and all)
2-4 cloves of garlic chopped
1-tablespoon olive oil (can add more)
1/2 teaspoon salt (or salt to taste)
1/8-1/4 cup water; juice of 1/2 lime
