Maggie Beer Fig Jam
Straight from Southern Australia, this incredible jam is a favorite from Maggie's childhood. Her mother always burnt fig jam, not by design but because she was always distracted at the crucial moment! It was so fantastic, her daughter has replicated this childhood jam for everyone--and thank goodness. One taste and you'll be a convert.
The recipe: Reduced figs with no water, a bit of sugar and lemon juice—then "burnt" to perfection. (Not really burnt, caramelized would be the best description here.) What's not to like!
The flavor is fig all the way…intense and bold but not overpowering and the slightly burned background takes the edge off the sweetness…the end result has a thick but spreadable consistency that's perfect for spreading on a hunk of fresh baguette or toast. Wow.
