Terre Rosse Extra Virgin Olive Oil

Just outside the Medieval town of Spela, on a steep Umbrian hillside, are the olive groves of Hispellum.  Named for the local red soil, the Terre Rosse Extra Virgin Olive Oil produced here is a bright green-gold, strong, grassy and briny with flavors of artichoke and herbs, reflecting the environment in which the trees grow.
Spread over 30 steep hectares, the Hispellum groves, consisting of 80 year old Moraiolo olive trees, are naturally mulched with their own trimmings.  Wild mint and fennel grow among their trunks, which are home to more than 300 hedgehogs, brought in to naturally control insect pests—part of the process of transition to organic certification.

The trees are kept short to enable the hand-harvesting of the olives, which are pressed within 6 hours of being picked in a high-tech cold-extraction process.  The result is extraordinarily flavorful oil.  As Mario Ciampetti, Hispellum’s owner, puts it, “Terre Rosse is an expression of our country, our attachment to these magical places; its perfume is reflected in the emotion of walking among the olive trees to collect asparagus and herbs.”
