Di Modena Blue Label is your great salad balsamic vinegar, to use with relative abandon.  Acetaia La Bonissima’s Blue Label di Modena contains 40% grape must from the Lambrusco grape (the more must, the more sweetness and body).  It is well-balanced between sweetness and acidity, and can be used in a simple vinaigrette with extra-virgin olive oil, salt and pepper, or as a glaze for roasted meats or vegetables.  Made by Franco and Donatella Di Pietro in their gorgeous country farmhouse in Emilia Romana, it is made with the same commitment to quality that their Tradizionale is—at a fraction of the price.
