West Hill Creamery, Cambridge Classic Reserve Cheddar

Cambridge Classic won 1st place at the American Cheese Society Conference and Competition this year in Austin, Texas this past summer. Each cheese is hand wrapped in linen and aged for at least 12 months. The cheese is grassy and herbal, and doesn’t have the bite of older cheddars, the taste is creamy and rich.  ½ pound.

I would eat this cheese at every meal, underneath the bloomy rind is a soft creamy paste that is unbelievable with fresh fruit but it is also a great partner on a cheeseboard. But since I often skip breakfast (yeah I know, I shouldn’t) my all time favorite, no-bake dessert is this cheese drizzled with honey accompanied by some toasted nuts.  4 oz.
