Crowley Colby Cheese

Winfield Crowley and his descendants have been producing a local, artisan cheese for over 140 years in Healdville, Vermont. Frankly, that's pretty incredible.

Colby cheese is an American original; it doesn’t imitate a European cheese. The cheese has a “washed curd” produced by draining the whey from the cheese curd and replacing it with water reducing the acidity of the finished cheese. While belonging in the “cheddar” family, Colby cheese is softer and moister, with a sweet, nutty flavor, a favorite in sandwiches or with fruit.

Operating continuously since 1862, Crowley Colby cheese is produced at its original site in Healdville, Vermont, a great place to visit and watch cheese produced entirely by hand.
