Vermont Lemon F’AYR Cheese

This new cheese from the Crawford Family Farm is reminiscent of great Gouda! The semi firm paste is buttery and smooth, with a rich nutty flavor. In a converted circa 1910 barn on the family farm in Whiting, VT, raw milk from Ayrshire cows is transformed into delicious 2 pound wheels, dipped in bright yellow wax. Jim and his sisters Sherry and Cindy are warm, generous people with a deep love of their animals, land and the cheese they produce.
